Effect of Repeat Process Deacetylation and the Viscosity of Chitosan Deacetylation Degrees of Crab Shell (Scylla sp)

This research aims to: 1) Obtain the chitosan from the shells of crabs (Scylla sp), 2) Identify the resulting chitosan, 3) Knowing the influence of deacetylation process of repetition rates on the deacetylation degree of chitosan, 4) Knowing the influence of deacetylation process of repetition rates on the viscosity of chitosan. 

This research uses experimental methods. The first stage is done through a process of isolation of chitosan deproteinasi, demineralization and deacetylation. The second phase of the repetition of the process of deacetylation is carried out 2 times.The third stage is the characterization of chitosan (CTS I), chitosan deacetylation re-I (CTS II), and re-deacetylation chitosan II (CTS III) to determine the quality of chitosan include nitrogen content, viscosity, degree of deacetylation, and analysis of functional groups by using a spectrophotometer IR (Infra Red). 

The results of this study indicate that: 1) Chitosan can be obtained from the shells of crab (Scylla sp) through deproteinasi processes, demineralization and deacetylation, 2) Identification of the resulting chitosan degree of deacetylation showed the price by 79%, amounting to 0.7001 cps viscosity and nitrogen content of 6.3%, while the functional group analysis showed absorption at a wavenumber amide I 1658.78, 1627.92 is the amide II, and 1319.31 is the amide III, 3) Repetition of the process of deacetylation degree of deacetylation affect the price ie the price increase the degree of deacetylation of chitosan, 4) Repetition of the process of deacetylation affect the price of viscosity is the viscosity of chitosan reduce prices.
